Instant Pot Congee

Freezing rain can be treacherous, but it is also so beautiful that I hope for it every winter (on a weekend when fewer people travel, when roads are thoroughly salted, etc etc etc.) Adam combated the frost with an absolutely incredible instant pot congee, strengthened by frozen pork bones and crunchy bean sprouts. It chased away the chill and the remnants of my mild cold like nobody’s business.

Fun fact, I am quite picky about congee and often consume just enough to be polite. Reader, this congee was so good… I went back for seconds unprompted. So cozy, so fortifying.
