A :heart: A soup

Cameo: Laurel makes adam and akari soup!

Can I say something crazy? Brothy soup warms me up better than a creamy/pureed soup. I hope the devoted readers can relate this, and will not dox me for speaking my truth. And so, dear friends, (by that, I mean, Akari’s friends) spending this winter in my lovely, poorly insulated, landlord special home, I’ve needed broth BAD.

Akari and I were to attend the second part of a book binding workshop. Our hearts were warm under the tutelage of Jane, but my toes certainly were not. Adam and Akari were bringing over the fruits of their newly born sourdough starter. I had two bags of frozen kale in the freezer since October. The scene was perfectly set for a brothy soup.

  • The crisis: make a brothy soup for three without any vegetable broth and only the barest scraps bouillon.

  • The solution: Sautee onions and garlic, add in some anchovies over low heat. Due to what I can only imagine is witchcraft, anchovies DISSOLVE. Thanks to 2020 Bon Appetit for teaching me that!! Add in oregano (lots), salt (lots), Thyme or rosemary (whatever calls to you), garlic powder (if necessary), and smoked paprika (my spice MVP)

  • I learned: Filling the bouillon jar with boiling water to eke out what remains is very good. Slowly adding water and mixing along the way to make sure its all dissolved is better.

  • Add in:

    • Any kind of white beans: I think I used cannellini?

    • Any kind of onions or alliums: I used white onions, plus some frozen leeks. The day I no longer get satisfaction from using a frozen vegetable will be the day my music died.

    • Canned artichokes

    • Any kind of hearty green: The aforementioned frozen kale.
